A private luxury Golf Club in Palm Beach Gardens is searching for an exceptional Sous Chef to join the culinary team. The Sous Chef will assist the Executive Sous Chef in supervising food production for dining rooms, banquet events and other functions at the Club.
Description of Role:
Responsible for the development of menus, food purchase specifications and recipes. Supervises and motivates staff in the food production. Assists Executive Chef in maintaining food and labor budgets for the department. Performs all duties with a focus on exceptional customer service for both internal and external customers, attention to detail and sensitivity for confidential material.
Job Tasks/Duties:
- Supervises all training activities for kitchen, bakery, meat cutters, and other production and service employees to include the identification and analysis of training needs and the design and implementation of programs to address these deficiencies.
- Coordinates the work of cooks, and other kitchen employees to ensure that food preparation is economical and technically correct.
- Conducts regular physical inventories of food supplies,and assesses projected needs; orders all food and supplies for catering and cash operations.
- Ensures that high standards of sanitation and cleanliness are maintained throughout the kitchen areas at all times. Sanitation must meet local and state guidelines.
- Assist Executive Chef in control measures to minimize food and supply waste as well as theft.
- Safeguards all food preparation employees by implementing training to increase their knowledge about safety, sanitation, and accident prevention principles.
- Consults with catering staff about food production aspects of special events being planned.
- Cooks or directly supervises the cooking of items that require skillful preparation.
- Make periodic and regular inspections of assigned units to observe quality of food preparation and service; food appearance; and cleanliness and sanitation of production and service areas, equipment and employee appearance.
- Assists with the develop recipes and portion specifications in accordance with consumer tastes, nutritional needs, product specifications, ease of preparation and established procedures and budgetary constraints; participate in other menu planning activities to include the determination of purchasing specifications, product and recipe testing and menu development.
- Assist operation managers as requested in areas such as plate presentation, special function menu planning and the design of new service areas.
- Provides customer service to members, staff and external customers; meet customer needs; offer options, resolve problems and follow up with customers; ensure full customer satisfaction without unnecessarily referring customer to other staff members; and maintain a friendly, helpful demeanor.
Qualifications/ Education:
- A minimum of 3 years as a Sous Chef; preferable in top private clubs, resort 4 star restaurants, hotel settings.
- Experienced and achieved competencies in both quality banquet, ala carte settings, and possess talent in food design and plating
- Management experience and excellent leadership abilities, guest services, strong oral and written communication, and organizational skills are preferred.
- Ability to manage the international staff in a positive and productive manner by motivating, developing and managing employees as they work.
- Valid Florida Food Manager Certificate is preferred.
- Must be able to speak, read, write and understand the primary language(s) used in the workplace.
Physical Demands/Work Environment:
- Required to stand, walk, climb stairs, stoop, kneel, crouch, bend, stretch, twist, and or reach throughout an 8-10-hour shift.
- Able to push, pull or lift up-to 40-50 pounds, continuous repetitive motions.
- Able to work in hot, humid, and noisy environment.
- This position will not have a set schedule and may need to work weekends, evenings, and/or holidays.
- Must be polished, professional, friendly, and be able to multitask and take initiative in a fast-paced, high-pressure, deadline-driven environment.
· Must be a team player.
· Must pass drug test and background check.
Job Type: Full-time
Pay: $60,000.00 - $70,000.00 per year
