Overview: The Manager is Responsible for the management of all aspects of the outlet function in accordance with hotel standards. Directs, implements and maintains a service and management philosophy of exceptional guest service.
Essential Duties and Responsibilities:
- Maintain complete knowledge of and comply with all departmental policies, service procedures, and standards.
- Ensure that standards are maintained at a superior level daily.
- Oversee all food and beverage outlets.
- Design and develop division policies and operating budgets, including, but not limited to, staffing, forecasts, and payroll costs.
- Prepare, implement, and maintain division standards and control objectives.
- Participate in the establishment of a marketing and public relations plan for F&B.
- Monitor productivity guidelines for all F&B departments. Maximize profits within F&B.
- Establish and implement annual objectives for the F&B department.
- Prepare and maintain an operating budget. Attend budget meetings regularly.
- Select and supervise F&B department heads.
- Ensure that required operating licenses and permits are displayed as required by law.
- Work closely with all Executive Team members in supporting and achieving the hotel's goals and objectives.
- Support and uphold hotel philosophy concerning hiring, employee relations, supervision, and disciplinary action.
- Participate in quality control activities.
- Work closely with General Manager in supporting and achieving the hotel's goals and objectives.
- Implement and maintain the spirit of the hotel's mission.
- Ensure the F&B department operates based on the departmental mission statement.
- Interact courteously and professionally with all guests, Associates, and community members.
- Respond courteously, professionally, and rapidly to resolve all guest and associate difficulties.
- Apply principles of logical thinking to a wide range of unstandardized intellectual and practical problems to perform and direct many varied and complex tasks.
- Attend divisional and general meetings.
- Supervise, direct, coordinate, influence, and persuade Associates to maintain the hotel's service standards.
- Interact with people beyond giving and receiving instructions, particularly interaction with supervisors, subordinates, co-workers, and guests in completing assignments and resolving Associate and guest complaints.
- Interpret and comply with various instructions furnished in written, oral, diagrammatic, or schedule form.
- Perform various duties, often changing from one task to another of a different nature without loss of efficiency or composure.
- Maintain clean and safe work area.
- All other duties as required.
Technical Skills:
- Thorough understanding of financial reports, including labor; ability to effectively direct and manage all facets of the Outlet.
- Demonstrate project management experience in organizing, planning, and executing large-scale projects from conception through implementation.
- Demonstrated experience in leading and developing people and the ability to establish rapport and/or influence and gain an understanding of others.
- Ability to lead a team, flexibility with work schedule.
- Ability to enforce hotel's standards, policies, and procedures with all kitchen personnel; ability to prioritize, organize and delegate work assignments.
- Ability to direct performance of Outlet associates and follow up with corrections where needed; ability to motivate Outlet associates and maintain a cohesive team.
- Ability to promote positive work relationships with service personnel and other departments
- Ability to ascertain associates' training needs and provide such training; ability to work well under the pressure of organizing and attaining production schedules and timelines
- Ability to maintain good coordination; ability to transport cases of received goods to the workstations; ability to transport pots and pans of food from storage/prep areas to the serving line; ability to work an 8-12 hour shift, 5-7 days per week noisy and sometimes close conditions
- Ability to work with all products and food ingredients involved; ability to use all senses to ensure quality standards is met; ability to differentiate dates; ability to operate, clean, and maintain all equipment required in job functions
Language: Required to speak, read, and write English, with fluency in other languages preferred.
Physical Requirements:
- Must be able to exert physical effort in transporting 20 pounds, endure various physical movements throughout the work areas, reach up and down, remain stationary throughout work periods, and satisfactorily communicate with guests and co-workers to their understanding.
- Restaurant Environment - constantly exposed to heat, high cold, slippery surfaces, and appliances such as stove, oven, dishwasher, and cooking top, as well as housekeeping and cleaning tools.
Qualifications:
- Diploma/Some College or an equivalent combination of education and work-related experience.
- Must have current and valid Serv Safe Manager Food Protection and Responsible Beverage Service Certification.
Experience:
- Minimum of three years experience as a Restaurant Manager.
- Hotel operational exposure (i.e., F&B) is preferred.
- Experience with a luxury or ultra-luxury property or brand preferred
The salary range for this position is $70,000 to $72,500. This is the pay range for this position that the Hotel reasonably expects to pay. [If applicable: This position also may be eligible for bonuses.] Decisions regarding individual salaries will be based on a number of factors, such as experience, type of hotel experience, location, and education.
