- Full Time position for mature, honest, reliable cook with restaurant style experience and knowledge of modified diets. Must be able to lift 50 lbs. Must be able to work flexible hours. REPONSIBILITIES/DUTIES
- Prepare all foods as per menu and recipes in quantity and quality, meeting all mealtime production deadlines.
- Follow modified daily menu and provide proper food items/portions for all functions/services that request/require food.
- Maintain a clean and sanitary work environment.
- Clean equipment as scheduled.
- Turn off and lock all equipment in kitchen at end of shift.
- Meet with residents upon admission to gather their dietary preferences.
- Responsible for adhering to all kosher dietary laws and facility and dietary policies and procedures.
- Ensure residents like/dislikes are updated on resident diet cards and followed at meal time.
- Ensure resident weekly menu selections are followed at meal time.
- Uphold all Heritage Manor policies and procedures.
- Knowledge in maintaining inventory of perishable and non-perishable food items. Can rotate food products via FIFO (first in, first out concept).
- Has an understanding of how to standardize recipes
- Works as a team member, assist other employees with their duties when necessary.
- Delegates jobs as needed.
- Agreeable to work non-scheduled hours/days when needed.
- Able to follow recipes and prepare scheduled menued items in accordance with modified daily menus.
- Control abuse of equipment, and check equipment, dishes, instruct on proper handling. When situations arise
- Review daily-modified menu, review production sheet, read, sign all memos, diet orders, instruct dietary staff on changes and special events.
- Review posted counts.
- Ensure cleaning schedules are being followed (daily, weekly, monthly).
- Follow through with dietary changes, positive attitude, comments, with residents and department.
- Start production as per production sheet.
- Check status of cook’s previous production sheet.
- Check in all orders: meat, produce, milk, and bread supplies in general.
- Review all necessary recipe adjustments with Food Service Supervisor.
- Review all necessary production adjustments with Food Service Supervisor.
- Maintain perpetual inventory Mon.-Wed.-Fri. Provide Food Service Supervisor with items needed to order when supply decreases. Maintain 4-week supply of food items.
- Maintain a clean and sanitary work area including all equipment and utensils. Instruct staff as needed on proper sanitation.
- Complete all daily production assignments within the assigned shift.
