Portofino On The River - Restaurant, Banquet & Cruise Center

We're Hiring a Full Time:
KITCHEN MANAGER

In this role you will be primarily focused on à la carte menu development and banquet execution.

Required Experience:

• Grill and Sautee Skills
• Prep and portioning
• 2+ years of kitchen leadership / kitchen manager

As a leader in our kitchen your primary responsibilities are, but are not limited to:

• Pricing selection and Ordering.

• Create and maintain consistent, timely menu item delivery
• Train, mentor and motivate your kitchen staff to levels of excellence
• Enforce standards of cleanliness, temp control and labeling and dating
• Organize a Kitchen Meeting Agendas
• When not assisting line cooks, help with banquet prep and production.

In collaboration with the Banquet Chef

• See the last orders out on Friday, Saturday and Sunday.
• Work to lower food waste and spoilage.
• Create product guides and participate ordering / inventory to ensure accuracy and manage costs.
• Establish a culture of positive feedback with Team Members.
• Ensure that the “COOK’S BIBLE”, recipe book, is up to date and open during all prep.
• Evaluate upcoming weekly events and volume and schedule BOH to meet that need.
• Setup, maintain, organize and clean storage spaces with your team.
