Job Summary
This college-wide position exists to plan, organize, direct, and coordinate the activities of the Northland Market’s. The intention of the position is to provide quality food and beverage products to Northland students, employees, catering clients and guests at a reasonable price. The position requires knowledge of large-scale food preparation and the ability to supervise, schedule, and coordinate the work of others. The position is frequently required to work along with staff in all positions to meet the production needs of the food service operation and catering. The position plans and organizes the flow of work and assigns employees to work assignments and specific job duties accordingly. Responsibilities of this position include forecasting production, scheduling, purchasing, pricing, production, appropriate use of materials, and sanitation. The position must ensure compliance with all State of Minnesota Health Department regulations. This position performs all supervisory duties with established Federal and State Laws, applicable union contracts, and Minnesota State/Northland polices/procedures.
- Ensure that purchasing and pricing are cost effective with a goal of covering the costs of the food service operation and maintain pricing in line with similar institutions.
- Manage purchase of all food, supplies, and equipment for food service following established college procedures for purchasing.
- Evaluate the cost effectiveness of repair or replacement of equipment and other items required by food service; requisition for the required service or purchase as appropriate. Track sales of key items to analyze popularity and determine production levels needed.
- Create annual budget and monitor performance throughout the year.
- Plans, directs, and oversees the food production, serving, and sanitation activities of the food service department to ensure efficient production and service of a quality product in a timely manner.
- Lead, supervise, and direct department personnel.
- Provide full service catering service.
- Develop new innovative ideas to enhance revenue and to provide the campus community with enhanced services to the campus community.
- Develop marketing efforts for food service including signage, specials, emails, and web promotions.
- Perform other duties as assigned to ensure the smooth functioning of the department and maintain the reputation of the organization as a viable business partner.
Qualifications
Minimum Qualifications
Minimum of two years food service preparation experience in a restaurant or institutional food service setting
Minimum of one year food service supervisory experience, or lead work, sufficient to supervise food service staff, cashiers, and student employees
Current State of Minnesota Serve Safe License or the ability to obtain license within first month of employment
Principles and practices of large scale food service management sufficient to meet food production requirements
Ability to cost-out recipes and determine accurate prices for products sold
Ability to be on feet (moving and standing) for long periods of time (up to 8 hours)
Basic math sufficient to establish pricing, calculate food cost percentages, balance cash and compute totals for deposits, compare sales results, and analyze financial statements
Preferred Qualifications
Working knowledge of accounting procedures necessary to accurately project, record, and track sales of food service and catering operation
Ability to operate cash register
In accordance with the Minnesota State Vehicle Fleet Safety Program, employees driving on college/university business who use a rental or state vehicle shall be required to conform to Minnesota State's vehicle use criteria and consent to a Motor Vehicle Records check.
