SCOPE AND PURPOSE OF POSITION:
ESSENTIAL DUTIES AND RESPONSIBILITIES:

Conducts a daily conference concerning the next day's menu, recipes, etc., and strategies to accommodate conflicts such as oven space and other preparation problems involving a particular day's menu.- Checks and maintains the safe handling of all leftover food to ensure safety for future utilization.
- Maintains close supervision to ensure that all health and sanitation regulations are met and maintained;
- Provides all new staff and substitutes with orientation and proper training.
- Responsible for the handling of all emergencies including participant's health, staff, equipment, supplies, facilities, etc.
- Creates and maintains a pleasant atmosphere in the congregate dining room.
- Supervises care and cleaning of kitchen, storeroom, dining, and all other areas used by the program
- Responsible for the purchase of all raw food supplies; Checks all incoming orders for weight and quantity.
- Keeps computerized records and any records as required by the County Office for the Aging.
- Keeps and maintains site inventory.
- Monitors portion control servings as established.
- Responsible for the handling and depositing of program contributions daily.
- Sets up and maintains routes for home delivered meals.
- Adds and cancels clients as appropriate.
- Expands the number of routes as the program demand for services increases and redefines routes and appropriate clients geographically.
- Confers daily with volunteers to inform them of route additions or deletions and checks at their return for changes in client’s health, etc.;
- Reports any client not responding to the volunteer's attempt to deliver meals.
- Takes reservations for congregate meals.
- Helps to plan special functions.
- Confers with subcontractors providing supporting services.
- Other duties as assigned.
Qualifications:
- Associate degree in food service, nutrition, or administration; or
- Two years of experience in the supervision of food preparation in a school, hospital, restaurant or other facility.
- Good understanding of safe and proper raw food preparation, serving, storage, etc.
- Working knowledge of procedures involving the counting and banking of funds.
- Ability to supervise a large food service operation.
- Ability to keep computerized records and update databases.
- Tact and good judgment in the supervision of staff and volunteers.
- Ability to create a warm and friendly atmosphere in which the elderly feel welcome.
- Ability to keep accurate records; ability to receive and carry out oral and written instructions from an immediate supervisor.
- If driving is required, must have a valid license that meets The Salvation Army insurance requirements.
