Esquire by Cooper's Hawk launched in March of 2022, and we are in search of a special person to lead the culinary team and to execute our vision. The Executive Chef will be an integral part of this special concept and will run a high-volume, scratch-kitchen restaurant with an elevated menu, along with strong private event sales and an adjunct menu from celebrity chefs like Tom Colicchio, Carla Hall and Tyler Florence. This person will ensure we execute at the highest level to create memorable experiences for all.

RESPONSIBILITIES

  • Responsible for directing overall kitchen operations, Management team and Hourly Team Members to ensure successful day-to-day execution for dish, prep and line, to provide a consistent and exceptional guest experience
  • Ensures collaboration between kitchen and front of house operations
  • Partners with Private Events to ensure successful execution of events
  • Will collaborate with in-house research and development team, as well as forge partnerships with external high-profile chefs
  • Represents company values and creates a respectful, positive, and professional work environment
  • Leads Community and/or department meetings
  • Responsible for either making or recommending employment decisions related to interviewing/hiring, terminations, discipline, cross training or promotions
  • Trains Team Members to adhere to Esquire’s standards
  • Ensures highly executed food quality, menu and system rollouts, and Kitchen initiatives
  • Focuses on retention of Kitchen Managers and Team Members
  • Oversees all Kitchen training and leadership development
  • Reviews and approves Kitchen schedules in a timely manner
  • Sets and achieves team and own developmental goals
  • Adheres to policies and trains others on standard operating systems and procedures
  • Maintains safe, secure and healthy work environment and ensures food safety standards are met
  • Maintains consistent and high-quality food, safety, sanitation, and facility standards
  • Responsible for achieving monthly financial metrics, and involves Kitchen Managers to achieve results
  • Responsible for weekly food inventory and associated results
  • Demonstrates depth of knowledge in food quality and recipes
  • Effectively utilizes computer systems and other technologies
  • Ensures restaurant and regional compliance with company policies, safety and labor laws.
  • Minimum 5 years of executive chef or executive kitchen management experience in high volume, full-service fine dining restaurant.
  • Scratch kitchen experience
  • Culinary School degree, highly desired or similar culinary training through experience
  • High standards across all areas of the kitchen; meticulous in approach
  • Ability to train, grow and lead others
  • Lead the orchestra, but able to play instruments along side as needed
  • Excellent verbal and written communication skills
  • Ability to read, understand, and communicate in English
  • Demonstrates financial acumen
  • Proficient in Microsoft Office Suite (Outlook, Excel, Word
  • Preferred certifications include ServSafe and state/local licensing requirements
  • Extensive food knowledge across cuisines and quality standards
  • Must be able to lift a minimum of 50 pounds.
