• Plans daily and weekly menus for guests and staff.
• Prepares family style breakfasts and dinners in a timely and efficient manner.
• Prepares lunches for guests and guides to take in the field.
• Ensures all staff and guests’ dietary restrictions are met.
• Maintains a clean and sanitary kitchen.
• Properly stores food by following food safety policies and procedures.
• Manages the inventory of food and camp supplies.
• Estimates food consumption and orders supplies as needed in a timely manner.
• Assists with general camp housekeeping duties daily.
• Assists with guest room housekeeping on a weekly basis, such as cleaning and changing linens when clients check out, or weekly, whichever is sooner.
• Performs other duties as assigned.

• Minimum of five (5) years of work or personal experience planning meals, cooking, and baking for small to medium sized groups.
• Ability to obtain an Alaska food worker card.

• Knowledgeable of proper food handling and preparation standards.
• Basic understanding of customer service practices.
• Prior work and/or living experience in remote wilderness setting.
• Must be a self-starter and able to work independently.
• General knowledge of APICDA communities, geographic locations, fisheries, and tourism.
